Recipe number 823 is Callebaut's iconic milk chocolate blend. Made from whole roasted cocoa beans for an unrivalled warm flavour with notes of caramel
ideal for creating the creamiest smooth chocolate ganache, chocolate buttercream icing and chocolate decoration. Great for using in silicone moulds.

traditional 'callet' shape enables faster melting, easier tempering and a glossier finish.
Recipe 823 has standard fluidity, which means it can be used with moulds and in crèmes, sauces etc.
Individual chips may show some white on the surface - this is purely milk solids coming to the surface and disappears at higher temperatures in baking - it is perfectly natural and will not affect your bakes.
